Cod with a Pea & Mint Crust Steamed Parcels

Introduction

These little parcels of joy are ever so easy to do. They can be a light, healthier meal or an easy dinner party winner. They take minutes to prepare and just need to be popped in the oven

Ingredients

Cod fillets - this also works with any white fish such as Pollock, Halibut or Hake

1 jar of our Pea & Mint Ketchup

Lemon slices

A squeeze of lemon juice or white wine

Green vegetables such as spinach, tenderstem broccoli, asparagus or sugar snap peas

How to make

Pre-heat your oven to 190C

Take some baking parchment paper big enough to envelope each cod fillet. 

We like to scrunch it up first as it makes it easier to use

Lay a row of lemon slices long enough for your cod to sit on. 

Pop in your favourite green vegetables

Lay your cod fillet ontop

Generously spoon our Pea & Mint ketchup over the top of your cod fillets

Squeeze in some lemon juice or a dash of white white

Wrap each parcel as tightly and carefully as you can so all the steam stays inside

Bake at 190C for 20mins 

Serve with a zest dressed salad and some new potatoes drizzled with butter
